Both cheeses are made in Cornwall from West Country milk by the Davidstow Creamery. The Extra Mature (550g) is typically matured for around 18 months with a rich, strong flavour and a flinty texture (strength 4). The Vintage reserve (500g) is typically matured about 24 months for a more robust, intense and complex taste with a crunchy texture (strength 5).
